Pasta con Pomodori al Forno

A stifling relentless heat wave with cool ocean breezes stuck out-to-sea give new meaning to cococooks.

 

 

 

 

 

 

 

 

 

Two bright orange heirloom, alongside sweet yellow and cherry tomatoes from the Saturday market were shriveling—waiting for a breeze, I fired up the oven and collected a few more staples.

 

 

 

 

 

 

 

After a drizzle of olive oil and a sprinkling of kosher salt and pepper (a 20-minute blistering blitz at 425 degrees),

 

 

 

 

 

 

 

the juicy tomatoes rested.

 

 

 

 

 

 

 

Much later, a red onion sliced into half moons softened in a tiny glug of olive oil.  Shy of brown, three large slivered garlic cloves tumbled into the skillet.

 

 

 

 

 

 

 

The pasta boiled and lent the onions a ladleful of pasta water.

 

 

 

 

 

 

 

Glistening tomatoes melted with a tangle of spaghetti; too, too divinely simple.

 

 

 

 

 

 

 

Intense fresh tart-sweet flavors woven together by torn basil and Parmesan led us to the patio to acknowledge our blessings and pray safety for firefighters across California.
