Cupcake for Julianna

Brainstorming cupcake possibilities with Jules provided me with an idea.








There is a cute little tool to remove the center from a cupcake.








I frosted the vanilla cupcakes with Marscapone Whipped Cream.















Next time I will be more proficient at hiding the berry.

Birthday Cupcake


  • 1 1/2 cups cake flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs plus one yolk, at room temperature
  • 1 teaspoon vanilla extract
  • 2/3 cup sugar
  • 6 Tablespoons butter, melted and cooled
  • 2/3 cup buttermilk


  1. Preheat oven to 325 degrees F. Line muffin tin with foil liners.
  2. Whisk flour, baking powder, baking soda and salt in medium bowl until combined.
  3. Whisk eggs, yolk and vanilla in a large bowl of an electric mixer until well blended. In a steady stream pour sugar into eggs, whisking constantly.
  4. Stir together melted butter with buttermilk. Add one half of the dry ingredients to egg mixtire; then add half the wet ingredients.
  5. Continue until wet and dry are combined without lumps. Do not over mix.
  6. Fill cupcake liners about 2/3rd full. Bake 18-20 minutes until done. Cool 5 minutes and remove from tins. Cool completely before frosting.
